The protein quality of a food can be measured by a scale called the Protein Digestibility Corrected Amino Acid Score (PDCAAS).
Common protein supplements (whey, casein, and soy) all receive 1.0 scores. Meat and soybeans (0.9), vegetables and other legumes (0.7), and whole wheat and peanuts (0.25-0.55) all provide diminished protein digestibility. Thus, in theory the most logical approach for evaluating protein quality is to compare amino acid content (taking bioavailability into account) of a food with human amino acid requirements. The two criteria of a protein that determines its quality is the protein's digestibility and its amino acid profile. If the protein is not digestible, it will be excreted in the feces. When the amino acid profile of the dietary protein matches the essential amino acid requirement of an animal, it is a quality protein.
