Course card color can only be changed on solid colored course cards, not course cards with a designated image. 1. In your Canvas Dashboard, click on the three dots in the right corner of the course card. 2. Choose the Color you would like to change the card to and click Apply.
All your current, past, and future courses appear under the Courses page (click “Courses” on left then “All Courses” within Canvas). Since Auburn has no plans to remove Canvas courses, after almost seven years, some faculty may have numerous courses. The large number of courses can make searching for a specific course difficult.
I know that one is able to change the course (s) color tab (s) in Canvas. I've done some research on the topic and have listed below a few discussion posts in reference to changing color (s) in Canvas:

The Red Warning Icon [2] notifies you that the entered grade is not supported in the grading scheme. Canvas will also display an invalid grade warning message when an invalid grade is entered.
Our engineers have deployed a fix, be they may still be seeing blank screens or faded images/text if you have not cleared your cache or done a full re-load of the Canvas page in your internet browser (click CTRL F5 to do the full re-load)...
