We did something similar by using an enrol plugin that auto-enrols a user when they view a course to provide limited access to guests (we have our own, but there are a couple in the plugins database ). You could give permissions to the guest role to view certain materials within a course, but not others.

You don't need a plugin to do that, you can do manage access for guests using Moodle's existing system of roles and permissions . For example, you might give the Authenticated User role, which is given to all logged-in users, access to view all your courses. You could then give the Guest role access to just view certain resources.

In selling a course, it would be useful for a potential student to see what they are likely to experience and get for their money, e.g. the format, syllabus and example unit of work.

Thanks Mark. So I should create a new role, and providing I ensure that there are no permissions for them to self-enrol or enter via guest access, and then manually enrol these people in that one particular course I want them to view, this should solve my dilemma??

Apologies if I'm missing something, but if you only want guests to access one course, how about using the standard guest access functionality, as described in the documentation Guest access (which has remained the same since Moodle 3.3)?

We don't have the function within our plugins. (Our only plug-in is 'Questions Type').
