I am currently looking for a way to unpublish concluded courses, as well, via the API. Since we're using the API, un-concluding and unpublishing the course would be an option, too, but, frustratingly, "un-conclude" doesn't seem to be an option available via the API, only the GUI.
If you are using a Free-for-Teacher account, you cannot publish a course until you have verified your email address. If your course has been published and includes grades, you cannot modify the course's published status. Locate the Unpublished Courses section in the Dashboard [1].
It would be beneficial to be able to unpublish a course at the end of the semester, quarter, trimester, session, what-have-you. And there are a number of practical reasons as well as possible privacy reasons why would want to prevent student access to a course AFTER the course has been completed.
You only have to publish the site once. You can unpublish the course by going to the Home page and clicking the Unpublish button. This will turn off student access to the course site. However: Once you have added a grade for any student, you can no longer unpublish the course site.

Once student interaction on your course is no longer needed (only viewing), setting an end date will manually 'archive' your course and remove it from your, and your students', dashboards. The course will still be accessible in archive format by clicking on courses and viewing Past enrolments.

If an item is published within an unpublished module, students cannot view the item on the Modules page but they can still view the published items in other areas of Canvas. However, they will not be able to interact with the item until the module is published.
