Does it matter which FE exam I take? No. You may take any FE exam discipline to get EIT certification, and it does not matter for your PE license.
Studying for the FE exam is like a part-time job. If you have been out of school for over 5 years, you should start studying 6 months in advance, but if you are currently in school or you've recently graduated, then you may only need to put in 4 months to get a passing grade.
Can I apply for the Principles and Practice of Engineering Exam without taking the FE exam? Yes. You may apply directly for the PE exam, if you have at least 12 years of engineering work experience that is acceptable to the PE Board, with five of those years in "responsible charge" of engineering work.

There are several different types of FE exams (civil, mechanical, electrical-computer, environmental, chemical, industrial, and other disciplines), all with different lists of topics.
The FE exam is actually harder than the Professional Engineer (PE) exam, simply because it is much more broad. It's best to take it as close to graduation as you can, with all that schooling still fresh in your mind.
The Fundamentals of Engineering Exam is a 6-hour, 110-question test that covers a wide range of topics related to civil engineering. You sign up for the FE online online at www.ncees.org and take it at any approved testing center. The test itself isn't hard.

The passing score of the FE exam on average is 70%. It is imperative to remember that these numbers can change very quickly. This is due to the board basing the benchmark score on the minimum ability score of the test takers.

If you can consistently get a score of at least 70% on practice exams, you can be confident that you will pass the actual test.
If the 'FE' credential has any local associations (such as the seismic requirements of the CA PE credential) then you may have to pass another exam - otherwise most states accept professional credentials issued by other states but require that you apply and get a state-specific credential.
In itself, the FE/EIT is not worth a whole lot. However, I tell all of the engineers I mentor to take it as soon as they are eligible. The key here is that the PE license is tremendously valuable in many areas of engineering. You never know where you will end up so it is best to take the FE/EIT so you are prepared.
