All new Canvas course sites are unpublished. This means that any students that have registered for the course and have accounts on the course site will not be able to access the course site until the instructor publishes it.
When an instructor is creating a course in Canvas it is unpublished, meaning that students cannot access the course at that time. When the instructor is ready, the course is published so that students can begin and it appears on their dashboard.
Published content in Canvas is indicated by a green checkmark as published status. Unpublished content is indicated by a gray circle icon with slash through it. The status of your course displays in the upper-right corner of your course's Home page. Your course must be published before students can access it.

You must publish a course before students can access it and its contents. Students cannot see unpublished courses and content. Publishing a course is a course permission. If you cannot publish your course, your institution has restricted this feature.
Now using the Course Navgiation menu, go to the course settings page. Once you get there, look at the bottom right side of the page (see below). Click the link to delete your course. If you are a Canvas admin, you can delete the course manually (see above), or through SIS import using a CSV file.
To unpublish an assignment, hover over the published button for the assignment and view its status. If the assignment can be unpublished, the hover text will confirm you want to unpublish the assignment, and the button will change from green to red. Click the button to confirm.

Within the content item, unpublished content is indicated by a gray circle icon with slash through it. You can easily switch between the two statuses by clicking on the publish or unpublish button. See this guide on how to publish a page.
Unpublished: item is visible to instructors, designers, and administrators, but students cannot tell that it exists. It will not appear in students' to-do lists, the Course Summary, or the calendar, even if it has a due date set. Students will also not be able to see it in the Gradebook.
Pretty simple...just go to your "Assignments" page in your course, and then click the green check mark icon to the right of the assignment name. This will "unpublish" the assignment making it not viewable anywhere in the course (including the Gradebook) to your students.
