Sure. Make a selective backup. Select only the assignments. Download the backup. Upload to each course. Restore.

Ben's suggestion is a good one and I have used it multiple times myself. Other alternatives might be to use the sharing cart, or groups.

I have to agree with Al that using groups is the wiser way to go. Best example is when you need to move a student, say from the hi ability group to the above average ability group. If the students are all in the same course, then a student move brings all the work to whichever group.
