Navigate to the Materials page of the course you'd like to save to Resources. Click Options at the top. Select Save Course to Resources from the drop-down menu. Select the Resource Collection in which you'd like to house your course content.

In your course, click Gradebook in the left menu. Click the menu icon (three vertical dots) in the upper-right corner. Select Export in the menu.

I have a recurring weekly assignment in my course. I'd like to copy or duplicate this assignment. How do I copy materials in a course?
There is no option to directly copy or duplicate materials within a course. Instead, you can save a template of your assignment to your Resources. From there, you can copy as many versions of the assignment as needed back into the course.
To copy a folder to another course: Click the gear icon next to the folder. Select Copy to Courses from the drop-down menu. Select the destination course (s). Click Copy Folder . Click Advanced Settings and then Advanced Options for each item you'd like to add a due date to. Select the due date . Click Copy Folder to complete.
Copying materials from Resources. Enter a due date before confirming the copy. To copy an item from Resources to a course: Click the gear icon to the right of the material in Resources. Select Add to Course from the drop-down menu. Select the destination course (s). Select the due date. Click Add to complete.
Due dates copy by default when copying individual course materials to another course. Due dates do not copy by default when copying folders with content to another course or when copying materials from Resources to a course.
