You can take the bulk of it online at hunter-ed.com. Take all the online quizzes (8 or 9 of 'em, about 5-20 questions each, then take the online final (something like 80 questions), then just go somewhere to take the in-class test. That's what I did. Spent a couple hours on the online stuff, and 5 minutes at the "field day".
You don't have to take "THE" NC safety course. When I took the course, they said the card would be accepted anywhere in the country. So as long as you have taken a safety course that satisfies the hunter education certificate of competency in the past, and have the card, they should accept that.
When we moved to NC, I had never taken an HE class and was given my NC license because I had a current hunting license from another state. I was also above the age for which the class was required.
