To unpublish a course in Canvas, go to the course home page, and click the Unpublish button. To unpublish a specific item—such as a module, assignment, file, or other item—click on the cloud icon at the far right of the item listing. If it is green with a check, then it is published and visible to students.
When an instructor receives a new Canvas course site, it is, by default, Unpublished. This means that any students that have registered for the course and have accounts on the course site will not have a Canvas Card link on their Dashboard for the course until the Instructor "Publishes" the course site.
You can Unpublish the course by going to the Home page and clicking Unpublish. This will remove the Dashboard Card link from all student accounts. Note: Once you have added a grade for any student, you can no longer Unpublish the course site.

However, they will still be able to see the Discussion in other areas of Canvas, such as the Syllabus and the Calendar, but they will not be able to open or participate in the Discussion. Please be aware of these potential scenarios when adding course content to a Module.

Instructors can utilize the time when a course is initially not published to set up their course for the semester. It is also possible for instructors to unpublish their course, which will prevent students from accessing the course.

Once student interaction on your course is no longer needed (only viewing), setting an end date will manually 'archive' your course and remove it from your, and your students', dashboards. The course will still be accessible in archive format by clicking on courses and viewing Past enrolments.

You cannot unpublish a course once there is a graded submission, so the course settings route would be the way to go.
You can unpublish ( How do I publish a course? ) so students are unable to access the course from the previous term or you can go into the settings of the course and set it so that students cannot view the course after the end date. The second way maybe the easiest way as you can set it your course and as you create a new course or throughout the semester and once the term ends it will automatically be removed from students being able to view it.

Once you Publish your Canvas course site, you do not have to republish it again if you add new content. You only have to Publish the site once.

Unpublished modules are invisible to students. Modules control the entire flow of your course and its content. When you add items to a Module, please be aware that an unpublished module overrides the state of individual module items. Note: Publishing a module will automatically publish any unpublished content items within the module.
If an item is published within an unpublished module, students cannot view the item on the Modules page but they can still view the published items in other areas of Canvas. However, they will not be able to interact with the item until the module is published.
Students cannot see any of the actions involved with published status, such as published and unpublished icons and setting icons. Students will only see published modules and available module content items, which are displayed in gray text.

Publishing a course is a course permission. If you cannot publish your course, your institution has restricted this feature. Publishing your course will send invitations to any users who were manually added to your course. Users added via SIS import will not receive an invitation.
