To Edit a Course in Garmin Connect web
Tap on your course, pull up the elevation card from the bottom and scroll all the way down. There’s a button to edit the course. Tap that to go into the course name to edit it. I don’t know why Garmin wouldn’t add the edit option to the top right menu but there you have it.
Above the map is a menu bar with Share/Export/Compare/Send to device/Save as Course/Print Select Save as Course. Then click Save Perfect! Thanks for the quick response. I can't tell from your comment what you're looking at. I'm looking at the Garmin Connect mobile app on an iPhone.
Select the course, find the 3 dots at the bottom right of the box where the course name and details are listed, select Modify (no Rename here either, consistently cryptic), and then lo and behold there's a pen besides the name in the same details box. Click the pen (not the name, you fool), and there you are.

To do this, go Menu > Courses > [click into the course you want] > Spanner > Name (the top option) > Then type a new name.
Open the route, click edit (button is on the top left), you can then drag and drop any of the waypoints on the route including the start and finish.
Go into 'view details' & in the bar above the map, there are a few symbols including a red circle with a white X in it; click that to delete the course.

NOTE: After making any change to a course, even if only to reverse the direction of the course, the distance will be recalculated after the edit has been saved. The newly-calculated distance may not be equal to the original distance measured by your Garmin device.

When naming courses, keep in mind that most devices have a limit where they only look at the first 15 characters in the name of a course. If there are multiple courses where the first 15 characters are the same, the device will think they are the same course.
