If you were added to the course by the Instructor or the Institution then, as Christoper said, you would need to contact the Instructor or Institution (or Canvas Admin) to remove you from the course.

Hello and welcome to the Canvas Community! To address your question, students are not able to delete their enrollment status in courses. You would need to contact the instructor or an administrator for the institution to request the removal.
@dufay_k , go to the course and click on People. You should see a gear icon by your name. If you click on the gear icon then you'll get the option to "remove from course." If you don't see the gear icon then you'll need to contact the person who added you to the course to have them remove you.
From your course home page, click the settings tab at the bottom of the course menu. Once in settings, there will be options for both deleting or ending the course on the menu on the right side of the page. Click whichever one to end or delete your course.

You may be able to deactivate an enrollment in your course within your course Settings in Canvas. Once you delete a course, the course will be completely removed from your institution's account and will not be viewable by you, prior students, or the account administrator.
If you only want to remove the course from Courses & Groups in the Global Navigation, you can change the course end date, or if you have permission, conclude your course instead. Before you delete your course, make sure you have a record of your Course ID number.
Removing a course from the Dashboard simply removes it from that view, it will not remove it from the all courses page.
Unfortunately, we don’t delete courses from Canvas. We recommend unpublishing the course or simply following the directions above to remove it from your Dashboard.
