If you open the activity on your watch (Menu> History> Activities> then select the activity you want to edit) scroll through to the lap you want to delete then push and hold the lap/reset button (bottom button) you should then get the prompt confirming if you want to delete that lap. Select yes and the lap is gone.

When naming courses, keep in mind that most devices have a limit where they only look at the first 15 characters in the name of a course. If there are multiple courses where the first 15 characters are the same, the device will think they are the same course.
