Inactive students can no longer see or access the courses from which they have withdrawn, but they remain visible to instructors in the People tool and, optionally, the Canvas Gradebook. In both tools, inactive students can be easily distinguished from active enrollments by the presence of the "Inactive" flag to the right of the student's name.

Hello and welcome to the Canvas Community! To address your question, students are not able to delete their enrollment status in courses. You would need to contact the instructor or an administrator for the institution to request the removal.
You may be able to deactivate an enrollment in your course within your course Settings in Canvas. An inactive enrollment retains prior activity in a course but does not allow the student to access course content. This status can be used for students who do not pay tuition or drop the course at a future date.
Professors can see data about their students, like how much they interact with the class page, the last time individual students logged into Canvas and if they are viewing content like online readings and videos.
Canvas can only detect the activities that are on its tab. If you are working on other tabs, it is not possible for the professor to see what one is doing on other tabs. Students can use such a loophole to search for the answers and pass the exam.

If you have the ability/permission to manage enrollments within your courses you can remove someone by going to the people tab and clicking the three dots on the right side of their row, or from the sections tab under course settings.
Select Remove from Course NOTE: Removing a user from a Canvas course, removes their ability to see the course and the Instructor's ability to see their participation. If you wish to keep those records available but still remove the user's access, select "Deactivate User" instead.
Unfortunately, there is no way to clear a student's attempt for a test. Canvas was considering adding this feature, but ultimately chose not to (see Delete Quiz Attempts for more information).
