Everything, all content, all submissions, everything, will be gone and in many cases you can't get it back - or at least not without a frantic 911 call to Canvas Support.

The reset course content feature exists to purge all content from your course and essentially give you a new Canvas course. It does NOT remove student enrollments, but it will remove all student work associated with assignments.

Pages are content pages like any web page; they can include a combination of text, images, and files (documents, videos, etc.). Files includes any documents, videos, images, or other files you have uploaded to your course. Why use Pages?

If all the content is missing in the course, being directly deleted is unlikely. However, you will want to confirm with the instructor that the course content was not deleted by them, any co-instructors, or TAs.
