From your course home page, click the settings tab at the bottom of the course menu. Once in settings, there will be options for both deleting or ending the course on the menu on the right side of the page. Click whichever one to end or delete your course.
Only your current courses can be added or removed from your Dashboard. The list of those courses appear above Past Enrollments. Any courses from Past Enrollments and below can not be starred. To put a course on your Dashboard, click the white star [Green Box].
Once you Publish your Canvas course site, you do not have to republish it again if you add new content. You only have to Publish the site once. You can Unpublish the course by going to the Home page and clicking Unpublish. This will remove the Dashboard Card link from all student accounts.

@dufay_k , go to the course and click on People. You should see a gear icon by your name. If you click on the gear icon then you'll get the option to "remove from course." If you don't see the gear icon then you'll need to contact the person who added you to the course to have them remove you.
Once student interaction on your course is no longer needed (only viewing), setting an end date will manually 'archive' your course and remove it from your, and your students', dashboards. The course will still be accessible in archive format by clicking on courses and viewing Past enrolments.

What happens at the end of the semester? Your course will be "concluded" 2-3 weeks after the end of finals period. This means the content will be in an archival state. You will maintain full read/edit access to the site and students will also have access to your course content for up to 5 years.

If there are no gold stars then Canvas will display all courses listed within above the Past Enrollments section.

Which courses display on your Dashboard when you log in can be managed by clicking the ‘Courses’ icon then selecting ‘All Courses’ . The stars on the left are the way you select which courses you want to see when you log in on the Dashboard.
Do not leave copies of your courses on PC’s in public areas. There are sites on the web where someone could sell your course content and it’s nearly impossible to get those sites to remove your content once it is out there. Keep control of your content.
It will probably be the one time you delete a course without exporting and saving a copy to your hard drive that will be “THE TIME” you realized that it contained some only copy of a file that was important. So take the few moments it takes to export a copy of this material to a safe place before proceeding to permanently delete this material.
You may permanently delete the manual Master course shells you created yourself. The operative word is ‘Permanently’
You may be able to remove an enrollment in your course within your course Settings in Canvas. Removing an enrollment deletes the enrollment from your account, but admins can view these enrollments as deleted enrollments in account-level reports.
Removing enrollments is a course permission. If you cannot remove enrollments in your course, your institution has restricted this feature. Enrollments may be added by your institution's student information system (SIS). If an enrollment is created via SIS, only admins can remove an enrollment from the course.
